Köves gets its name from the fact that underneath the rain-washed topsoil, in effect rocky ledges have been created. Vine roots have a most difficult task to get water and nutrients from the layers, which results in slow growth. Small clusters and very low yields characterise these parcels (maximum 0.3-0.4 kg/vine). The small bunches and the concentration of the small berries have resulted in a wine that is highly complex and mineral, with an ageing potential of many, many years and an incredible persistence of aromas.
