Made from Irsai Olivér grown on the Öreghegy in Versend. Light, elegant, airy, like an eagle soaring in the sky. Irsai Olivér is a Hungarian crossing, so it is a Hungaricum grape, but it is also grown outside Hungary. It is an early ripening variety, harvested typically in mid to late August, which means that its lightness and vigour depend largely on its acidity. Planting it in the right location and harvesting it at the right moment is very important. Its sweetness, fragrance and vigour are best achieved and maintained by reductive vinification technology.
