Vinification technology: foot treading whole bunches without destemming. Fermentation in open wooden vats. Skin conntact for 6 weeks. Malolactic fermentation partly in the open vats, partly during the barrel ageing. The wine was aged dor 12 months in small French oak barrels. Gravity flow bottling without filtration or fining.
