3 puttonyos aszú is still made according to the ancient customs and specifications: 3 puttonys (i.e. baskets) of aszú berries (the botrytised berries were picked by hand one by one) are added to 1 Gönc barrel of must (136 litres). The grapes are left to soak for a day in the must and then pressed out together. Fermentation in oak barrels takes about 20-30 days, after which the wine is aged for 24 months in oak barrels, and then it spends several more months in bottle in the winery’s bottle-ageing cellar. The effects of Botrytis lend a special character to the wine and make it spectacularly rich in aromas: honey, exotic fruit, lime, peach, acacia and birch, to name just a few.
