Pannonhalmi Sauvignon Blanc, 2021

Directly after harvesting the grapes were destemmed and selected by an optical sorting machine followed by 14 hours of maceration at a very low temperature (7°C). After gentle pressing the cleared juice was fermented in stainless steel tanks, partly on the skin. The wine was kept on fine lees for two months.

The crops of two vineyards, Széldomb and Tavaszó which bear diverse soil and microclimatic characteristics were harvested in different phases of biological ripeness. Due to the timely and carefully applied technology in the winery, a tasty and crispy white wine with the typical notes of the grape variety was produced that, at the same time, authentically expresses the terroir of Pannonhalma. The aromatics of the wine are dominated by hay, gooseberry and green apple, enriched by a sweet tinge of elder flower on the finish.
