Spontaneous fermentation, without added yeasts. The wine spent 1-2 weeks on the skins. The juice was separated from the skins by gravity flow and then fermented oxidatively in open vats for another 6 weeks.
Aged with fine lees in used and new 225 and 500 litre oak barrels until bottling on 10/10/2016. During the ageing period, only sulphur was used. It was bottled unfiltered. Since then it has been ageing in bottles.
