Before the the Phylloxera blight, Kéknyelű was considered one of the most important varieties of Somló. The vines are trained as bush vines (or Gobelet) and are protected by herbal preparations. The grapes were crushed and destemmed, and after 24 hours of maceration on the skins, only the settled juice was used, and it was fermented without added yeast. No additives were used during vinification, except for 25 mg/l sulphuric acid which was added immediately before bottling. Gravity flow bottling without filtration or fining.
