Sárfehér is one of the oldest Hungarian grape varieties and it used to be one of the major varieties in Somló before the Phylloxera blight. The vines are trained as bush vines (or Gobelet) and are protected by herbal preparations. The grapes were crushed and destemmed, and after 36 hours of maceration on the skins, only the settled juice was used, and it was fermented without added yeast. No additives were used during vinification, except for 25 mg/l sulphuric acid which was added immediately before bottling. Gravity flow bottling without filtration or fining.
