Spontaneous fermentation, without added yeasts. It was aged with fine lees in used and new 500 litre oak barrels for 76 months until bottling on 05 June 2016. During the ageing period, only sulphur was used. It was bottled unfiltered. Since then it has been ageing in bottles.
