Vinification technology: foot treading followed by whole bunch pressing. Fermented in stainless steel tank, after one racking it was aged in a 12 hl large oval barrel for 6 months. Batonnage according to the moon phases. At the moment it contains no added sulphites. The plan is to apply gravity flow for bottling and the addition of 25 mg/l sulphur.
