The lightness of rosé is achieved by strict adherence to reductive technology, by preserving the carbon dioxide produced during fermentation and by selecting the best grapes. This means that only a small proportion of the colouring matter in the skins of blue grapes is soaked into the wine thanks to the short maceration time. Early harvested Kékfrankos grapes are onion-skin coloured, with a nice acidity and fresh fruitiness, and a harmonious flavour. They go well with fruit and starters or as a refreshment on its own served at 9-11°C.
