Chardonnay is an important variety for the winery. 2/3 of the grapes are pressed in whole bunches, in order to obtain the most gentle juice extraction. The concept is to make a fresh wine with varietal characteristics, but at the same time to add more depth and substance through barrel ageing on fine lees than would be possible by reductive technology.
