In line with traditions, the Babits family starts harvest in the second half of October, when the grapes are overripe and the sugar content of the grapes reaches 22-24 degrees. The grapes from various vineyards are treated separately from harvest to bottling. Pressing is carried out very gently. The resulting high quality must is the base material for the always high quality Babits wines. The cellar, the noble moulds covering the cellar walls and the ageing in oak barrels, which goes back to a long tradition, play a decisive role in the development of the typical character of Tokaj wines.
